For the past 7 years or so, I have made a weekly salad for myself every Sunday night. I started doing this when I went on the South Beach Diet in 2005, since so many of those meals feature a protein-topped salad. To me, it’s easier to make one big salad for the week rather than having to deal with washing lettuce and chopping vegetables when you’re tired at the end of the day. I find it’s a perfect example of eating well when there are healthy foods available. If I’m tired and cranky (which is every night, when I get home from work), open the refrigerator and see nothing made, I’m going to start mindlessly eating whatever I can get my hands on. When I have this salad made, I feel like I’m always half way to a decent meal.

Amy’s Texas Burgers are vegan with 12 grams of protein per burger!
I bring this salad to work for lunch with an Amy’s Texas Burger, and have it for dinner when I don’t feel like cooking from scratch.
Salad Ingredients:
1 head of organic romaine
4 oz spinach (about 1/2 bag)
3 stalks of celery
3/4 cup radishes
1 red bell pepper
2 carrots
1 cucumber
I also sometimes add some Dole bagged cole slaw, which adds some more bulk and crunch! I love cole slaw…
